Cucumber Watermelon Feta Salad made with cucumber noodles. This fun and refreshing summer salad is perfect for potlucks, picnics, and barbecues.
Ingredients
- 1 large seedless English cucumber
- 3 cups cubed watermelon 1/2-inch pieces
- 1/3 cup crumbled feta cheese
- 1/4 cup fresh mint leaves thinly sliced
- Juice of 1 lime
Instructions
- Use an Inspiralizer to create the cucumber noodles.
- Place noodles in a large bowl. Add the watermelon cubes, feta cheese, and mint. Squeeze fresh lime juice over the salad.
- Serve immediately.
- Note-you can add a little chopped red onion if you wish.
